** I make these and put them in the fridge to later put on sandwiches. I also make them in the winter with tomatoes that I froze whole.
12 plum tomatoes, halved lengthwise
4 tbsp. good olive oil
1 ½ tbsp. balsamic vinegar
2 large garlic cloves, minced
2 tsp. sugar (this can be omitted if desired)
1 ½ tsp. kosher salt
½ tsp. freshly ground pepper
Preheat the oven to 450. Arrange the tomatoes cut side up in a single layer on a sheet pan. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, sugar, salt and pepper over the tomatoes. Roast for 20-30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.
