Cucumber, Basil, and Peanut Salad

3 tbsp Seasoned rice vinegar
1 tsp Asian sesame oil
1 tsp fresh lime juice
1 tsp fish sauce
1 ½ lbs. cucumbers
¼ cup torn basil
¼ cup coarsely chopped salted peanuts

In a bowl, whisk together first 4 ingredients. Peel cucumbers, slice in half lengthwise, scoop out seeds, and cut into ¼-inch thick crescents. Add the cucumbers, basil, and peanuts to the bowl and toss to combine.
