Cabbage Slaw

Makes 4 servings

2 cups shredded cabbage
½ cup thinly sliced red pepper
1/3 cup thinly sliced red onion
2 tbsp. seasoned rice vinegar
2 tbsp. extra virgin olive oil
¼ tsp. salt
1/8 tsp. fresh ground pepper

Toss all ingredients in large bowl. Season to taste with salt and pepper. Toss again.
